Anyone who knows me, knows that I don't like to cook- at least most of the time. The reason for this is that mostly I get grief from my kids about what I make, so why should I be interested in doing something that only gets me ragged on?
But this past week, I made 2 dishes that won approval from the kids.
The first was a shepherd's pie. Well, it didn't win unqualified approval, but the comments were very constructive for when I should make it again.
The second was for some recipe called Sengalese Peanut Soup. Rosie wasn't around for this meal, and since Abe told her that there were tomatoes in it, she didn't even want to try the leftovers. But Abe and I had it as a whole meal.
Here are the recipes.
Easy Shepherd's Pie
Brown up 1 lb. of hamburger with seasoning
Drain the fat and put to the side
Make up 4 servings of instant mashed potatoes
Warm up and drain the water from 1 lb. of frozen mixed vegetables
Mix the hamburger and the veggies and put at the bottom of a casserole dish
Cover with the mashed potatoes and cook until the top is browned.
Sengalese Peanut Soup
Brown 2 boneless chicken breasts. Cook almost all the way through and then cube.
Saute a large onion, several cloves of garlic and some celery.
Add 3 cups (I used 6 and it had more soup texture) chicken stock, curry powder, a little chili powder, 1 large can of drained, diced tomatoes and simmer for 10 minutes. You can also add in shelled peanuts at this point.
Add back in the chicken and simmer at least 5 minutes, or until the chicken is fully cooked.
Add in 1 can of coconut milk and 3/4 cup chunky peanut butter. Mix well and simmer until heated through. (The peanuts can also be added at this point.)
